OLIVELET

OLIVELET olives are sorted and labored by hand, in order to salvage as much as possible of their unique confectionery taste.  The olives follow a traditional seasoning method of our region.

Kalamon Olive Fruit

This is the superior variety for the production of our distinguished table olives.  The variety requires moisture, is of average but stable productivity, and its fruit ripens in late November to early December.  It is characterized by a tree of average height with broad, deep green large leaves [the largest of all Greek taxonomies].  The fruit is elongated with a narrow stone that comes away from the flesh easily.  The fruit weighs 5-6 grams, has a flesh: stone ratio of 8-10 to 1, and an oil content of around 20%.
